Slow Cooker Beef & Barley Soup

I hope everyone is staying warm this winter. One of my favorite ways to keep warm is to enjoy a nice bowl of hot soup. Join me in the kitchen as I show you how to make Slow Cooker Beef and Barley Soup! This recipe is similar to my earlier Guinness Beef Stew in that you start with a mirepoix of vegetables - carrots, celery, and onion, but rather than searing the beef on the stove and cooking everything in a large pot, you are using a slow cooker. This Beef and Barley Soup is so warm and flavorful and is one of those dishes that tastes better the next day after the flavors have had some time to come together. It’s pretty easy to make as you do a little bit of prep work early in the day, throw all the ingredients in the pot and then the slow cooker does the rest of the work. The slow cooker takes a more tough cut of beef and practically makes it melt in your mouth by cooking it low and slow for several hours. One thing I will note is that barley absorbs a lot of liquid, so the longer you let this soup cook and sit, the less liquid there will be. So if you have a larger crock pot, add at least 8 cups of liquid while you’re making this soup (my pot was only large enough for a little more than 4 cups). Thank you so much for watching!
