Hot and Sour Soup (Sichuan Style) Ingredients: 2 chicken breast fillets 2 dried shiitake mushrooms 50g bamboo shoots 1 beaten egg 1 tablespoon chopped green onions Cornstarch slurry (as needed) Seasonings: 3 cups soup 2 tablespoons vinegar 1 tablespoon soy sauce 1/2 tablespoon sake Chili oil (optional) Instructions: ① Rehydrate the shiitake mushrooms and slice them thinly. Slice the bamboo shoots thinly as well. ② Lightly coat the chicken breast fillets with cornstarch and quickly boil them. ③ Bring the soup to a boil, add ① and ②, add the seasonings, pour in the cornstarch slurry, thicken the soup, then pour in the beaten egg and finish.
