EMBAÚBA: COMO COMER A ÁRVORE DA PREGUIÇA? (DA FOLHA AO FRUTO VERDE)

Today we're going to talk about one of the best-known trees in Brazilian fauna, but almost never remembered as food: the embaúba, also called imbaúba-branca (Cecropia concolor), imbaúba, embaubeira, umbaúba, and popularly known as the sloth tree. Despite being famous for feeding sloths, birds, and bats, the embaúba also has enormous potential as a PANC (non-conventional food plant), especially for its young leaves, inflorescences, and infructescences. In the video, we show how this pioneer plant, common in open areas and forest edges, can be used in completely unconventional ways in the kitchen. The great difference in this content lies in the little-known culinary uses of the embaúba: very tender leaves as a vegetable, tea, and farofa (a type of toasted cassava flour dish), green female infructescences for jam and sweet preparations, as well as young male inflorescences and female inflorescences still in flower bud as a kind of vegetable "pasta". We also discuss the ecological importance of the embaúba tree, its relationship with ants, birds, bats, and sloths, as well as its role in ecological succession, the recovery of degraded areas, and as a multi-purpose plant with medicinal, ornamental, food, and forage potential. Throughout the video, we show the harvesting of the embaúba in the field and take everything to the Sítio PANC kitchen, preparing chimarrão (a traditional South American infused drink), farofa (a toasted cassava flour dish), jam, and savory recipes with the green parts of the plant.
