Patoli Recipe Ingredients: 2 Freshly Grated Coconut, Jaggery chopped (1 bowl), ½ kg Rice Flour, Turmeric (haldi) leaves, powder (1-2 tsps.), Food Colouring (orange and green), water, oil (for dough), salt (if required for dough). 1) Chop the ends of the Turmeric leaves. If the leaf is bigger, you can further cut it in half. Keep aside. 2) Patoli Dough preparation – Add water and oil and knead to make soft dough. Add salt (if required). Divide the dough into three equal parts. Add the food colourings and knead again. Add some more oil if required. 3) Patoli filling – Add jaggery and cardamom powder to the grated coconut and mix. 4) Patoli Assembling – Take some dough, press it onto the leaves using three fingers and spread evenly. Add the filling in the middle and evenly spread that as well. Fold the leaf and make sure to stick the sides of the dough to each other by lightly pressing. 5) Steam the patoli. The first batch will take more time initially to steam, the next batch will take lesser time comparatively. Wait for a while it could take anywhere from 20 to 30 minutes to get steamed. The colour of the patoli leaves will change a bit. After steaming, let it cool for a while; then peel the patoli leaves off and enjoy!
