Do this with the potatoes and thank me later! INGREDIENTS: 6 baby potatoes (or large potatoes) 2 tablespoons of cream cheese 100g of grated mozzarella or cheddar cheese Fresh herbs to taste Milk (to adjust the texture) Drizzle of olive oil Salt to taste Black pepper to taste 200g of sautéed ground beef 2 tablespoons of mashed cooked potato 1 tablespoon of tomato paste (optional) Parmesan cheese for gratinating {Sauce} 1 container of plain whole milk yogurt 1 tablespoon of mayonnaise Lemon juice (or apple cider vinegar) Fresh herbs to taste Salt to taste Black pepper to taste INSTRUCTIONS: Cook the potatoes in the microwave inside a microwave-safe bag until very soft. Cut each potato in half and carefully remove some of the pulp with a spoon or melon baller, forming small boats. Set aside the removed pulp. Arrange the potatoes on a baking sheet or in an air fryer basket, drizzle with olive oil, season with salt and pepper, and air fry at 200°C for about 8 to 10 minutes to begin browning. Meanwhile, place the potato pulp in a food processor or blender and add the cream cheese, mozzarella (or cheddar cheese), chopped parsley, and a little milk, water, or cream just to help blend. Process until it forms a creamy puree-like consistency. Prepare the filling by mixing the already sautéed ground beef with some mashed cooked potato. If you want it to be more moist and reddish, add a tablespoon of tomato paste. Remove the potatoes from the air fryer and fill each cavity first with the ground beef mixture. Cover with a generous layer of the previously prepared potato and cheese cream. Return the potatoes to the baking dish, top with Parmesan cheese or another grated cheese, drizzle with olive oil, and return to the air fryer between 190°C and 200°C until golden brown and bubbly. For the sauce, mix the natural yogurt, mayonnaise, a few drops of lemon juice (or vinegar), fresh herbs, salt, and black pepper. Stir well until emulsified and a smooth cream forms. Serve the hot potatoes with the creamy sauce on top or alongside.
